PASTA WITH PECORINO CHEESE AND PEPPER

cacio e pepe

It is a very simple dish, typical of Roman cuisine!

Ingredients for two people:

  • 160 grams of pasta
  • 80 grams of grated pecorino cheese
  • black pepper
  • a bit of cooking water

Preparation  and cooking time: 15 minutes

Procedure

In a bowl, add the pecorino cheese and pepper;

Cook the pasta in salted water;

Set aside a cup of the cooking water;

Drain the pasta, pour it into the bowl, add a little warm cooking water and stir;

Arrange on plates and serve.

PENNE WITH BACON ZUCCHINI AND SAFFRON

Ingredients  for 4 people

  • 320 grams of penne
  • 3 zucchini
  • 2 slices of bacon
  • 2 tablespoons extra virgin olive oil
  • 2 sachets of saffron (about 1 teaspoon)
  • 4/5 tablespoon grated parmesan cheese
  • black pepper

Preparation and cooking time: 35 minutes

Cut the bacon into cubes, put it in a pan with oil and let it become slightly crunchy;

Cut the zucchini finely, add them to the bacon and cook for 10 minutes;

Cook the penne in salted water with the addition of saffron (the penne in this way, take on a slight yellow and absorb its aroma);

Drain the penne and add the seasoning by adding grated parmesan cheese and black pepper.

SPAGHETTI WITH POTATOES AND CHERRY TOMATOES FLAVORED WITH THYME

Ingredients  for 2 people

  • 180 grams of spaghetti
  • 4 or 5 tablespoons of extra virgin olive oil
  • 1 small onion
  • half  a tablespoon of tomato pasta
  • 4 medium potatoes
  • 6 cherry tomatoes
  • half a glass of white wine
  • thyme

Chop the onion and let it brown slightly in the oil;

Add the tomato paste and diced potatoes stir, add a glass of water and half a glass of white wine and salted;

Let simmer with the lid until the potatoes are cooked;

When the potatoes are almost cooked, add the chopped cherry and thyme;

Cook the spaghetti, add in the sauce and stir;

add a little  cooking water,  if necessary;

Put in the plates, add black pepper and more thyme.

TAGLIATELLE CON RAGU’ DI CARNE

TAGLIATELLE WITH RAGU  SAUCE

Ingredients for 4 people:

  • 350 grams of tagliatelle
  • 300 grams of minced meat
  • 5 tablespoons of extra virgin oil
  • 1 carrot
  • 1 small onion
  • 1 stalk of celery
  • half glass of white wine or red wine
  • 1 bottle of tomato sauce
  • salt
  • parmesan cheese
  • nutmeg

Preparation and cooking time: 1 hour

Put  the finely chopped celery, the carrot and the onion in the bowl with  five  extra virgin oil tablespoons and let them brown;

Add the minced meat and let it cook for few minutes, add half a glass of  wine and let it evaporate;

Then add tomato sauce with half a glass of water, salt and let it simmer with the lid for about one hour , stirring occasionally;

The sauce is ready when it is restricted;

Put the pasta it in the plates and  add the parmesan cheese and nutmeg.
